Why not grow something a bit different this year. Try tomatillos, a Mexican fruit with a citrusy sweet flavour. They grow in dainty paper husks and ripen by late summer. Tomatillos are one of our most ancient food bearing plants. They produce tart green fruits which ripen to pale yellow. They grow best in full sun and well-drained moderately rich soil. Raised beds work great for the tomatillo plant if your garden has heavy clay soil. Plant them at the same time you plant your tomatoes, when all danger of frost is past and the soil is thoroughly warm. They are hugely prolific and produce nonstop until laid low by frost. You harvest the fruit when they fill out their husks and the husks just begin to split. They are not self-pollinating like their tomato cousins. In order for the tomatillo flowers to set fruit, you must grow at least two plants. Otherwise, you’ll be left with lots of pretty little yellow flowers and none of the tasty green edible fruit. What will you do with your harvest? They take on the starring role in many Mexican dishes, but you can use this bright summer staple to add a bit of acidity and sweetness to a variety of dishes like salads, hot dogs, pork and even eggs.
