It is hot in Niagara and we have grown! These two factors have created an URGENT NEED for a walk-in cooler at the Hub and a refrigerated delivery truck.
For the next three weeks the Crew at Small Scale Farms will be asking for your help. Simply because we need your help to keep bringing healthy food to our community and to keep supporting our local farmers! We kicked off the #EverybodyEats campaign Saturday and so far, we’ve raised more than $1500 towards our goal of $20K.

We’ve been able to add more selection from Niagara farms (including our own) as the growing season unfolds, which is exciting! While our box is still not 100% local (and may never be, until we’re able to grow bananas here), we are thrilled to have already brought you local asparagus, fiddleheads, peas, zucchini, radish, lettuces, strawberries, raspberries, cherries and we look forward to so much more as the weeks of summer continue.

Radish 101
Radishes belong to the mustard or cabbage family (along with brassicas like horseradish, broccoli rabe, cauliflower, and romanesco), and they have been cultivated since at least the third century BC. The most commonly eaten portion is the root, although the entire plant is edible and the tops can be used as a leafy green.
The root of the radish is usually eaten raw, although tougher specimens (hello, black radish!) can be steamed, roasted, or sautéed. The raw flesh has a crisp texture and a pungent, peppery flavour. Fresh radish greens are typically discarded, but these nutritious greens are excellent in salads, pestos, or sautéed as a side dish or added to soups. They can even be blended into smoothies! Radish seeds can be sprouted and eaten raw, similar to bean sprouts. While we’re all familiar with the red, globe-shaped radishes found in the grocery store, here are a couple of others to try:
- Black radishes are known for bearing an earthy, spicy, bitter, and pungent flavour when raw and have a sharper taste than other radish varieties. When cooked, the crunchy flesh softens, and the flavour mellows, developing subtly sweet peppery undertones. Dice, slice, or shred them into a salad with celeriac, pomegranate, and pecorino cheese; apples, lemon, and mint; or carrots, arugula, and thyme. If you’re worried about being able to handle the heat, salt the radishes before using them to take the edge off.
- Daikon radish is often peeled before use, but the skin is edible and peeling is optional. Raw daikon has a sweet, lightly spicy flavour that tends to be milder than a peppery red radish. Daikon can be thinly sliced for a garnish or pickling; diced for cooking; or grated for pickling or used in baked goods and savoury dishes. Cooked daikon tastes mellow and sweet and becomes tender, similar to a cooked turnip.

RECIPE: Spicy Black Radish Chips
Spicy black radishes are sliced thin and baked up into a crispy, delicious chip. If you can’t find black radishes, you could use daikon or any other large radish. (Cooking times may vary with other types of radishes.)
Ingredients
- 2 pounds black radishes
- 2 tablespoons extra virgin olive oil
- salt and pepper to taste

Directions
- Preheat oven to 400F.
- Using a mandolin or very sharp chef’s knife, slice the radishes 1/4 to 1/8 inch thick. Place in a large bowl and toss with oil, salt and pepper.
- Arrange the radish slices in a single layer on a baking sheet covered with aluminum foil coated with cooking spray. Bake at 400F for 10 – 15 minutes; turn once, until lightly browned and slightly crisp. Remove to a wire rack to cool completely. Serve with your favourite dip.
